When we had a grill (currently can't have one in our apartment) Our favorite meal was:
chicken (marinated in 1 part soy sauce 1 part italian dressing)on the grill
Peppers (red, green, yellow, orange... etc.) Onions and Mushrooms in olive oil, some Italian dressing, and garlic powder on the grill
Fresh fruit (whatever we have)
Our favorite summer meal is grilled Beef/Chicken kabobs, corn on the cob, and pound cake with fresh berries and homemade whipped cream.
My mom's grocery's meat counter sells bacon burgers (hamburger with ground up bacon mixed in prepattied and frozen)I love to do those on the grill with corn on the cob, tomatoes and green beans and watermellon....mmmmmm soo good!

Okay, so this is a recipe that I took and edited for our families tastes!
Fiesta Chicken Salad:
bunch of romaine lettuce
chopped tomato
2 c. frozen (or canned) corn
1 can black beans
1/2 c. monterrey jack cheese
2 grilled boneless chicken breasts (I marinate them in honey mustard bbq from Kraft)
Serve with tortilla strips (thinly sliced soft taco shells baked and seasoned to taste) and whatever dressing you desire!
OH, and I would like the cute cook that is posing in the apron as well!! :)
We do a lot of salads and sandwhiches.
Greek Pitas with chopped greens, vinaigrette dressing, olives, pickles, feta and parmesean cheese and seasoned grilled chicken with a mediterranean coleslaw (like from Bella Luna) homemade hummus with chips.
Buffalo Chicken Salad -- kind of like what you get from Chili's except we grill our chicken.
Spicy Thai Peanut Salad -- I make a peanut butter vinaigrette with sesame or canola oil, rice vinegar, sirachi sauce, soy sauce, honey, and chopped peanuts. Served over greens with grilled chicken.
I buy a roasted chicken and pull all the meat off and we do anything from Pulled BBQ chicken Sandwhiches, Nachoes, Enchiladas, Soft Tacos etc.

I love that apron! Our favorite meal is grilled chicken covered in ranch and season salt. We pair that with some green beans, red potatoes, and berries from the garden!
We grow a garden in the summer and lettuce is always a hit! Our favorite meal is:
Shredded Grilled chicken breasts (rubbed with Italian seasoning, s&p, and olive oil)
Sundried tomatoes
Dried cherries
Garlic & herb feta cheese
Chopped walnuts
LOTS of leafy greens
Balsamic vinaigrette
Just toss and enjoy!!
We usually have a side of couscous with it....soooo yummy!

Grilling is the best thing to do in the summer because of the heat. I love anything fresh from the garden; green beans, lettuce, cucumbers, tomatoes, peppers, new potatoes. I love to grill steak and have new potatoes cut up on a double foil wrap with salt, pepper, butter and new onions on the grill also and some corn-on-the cob thrown in too!! Top it off with strawberry short cake. MMMMMMM. And of course a salad if you have room in the tummy....:-)

Our favorite is a grilled chicken salad. My Mom got the recipe after my Dad's open heart surgery when she took classes on raising good cholesterol.
Lettuce (our favorite is a combo of romaine and ice burg)
Grilled chicken breasts that have been marinated in a lemon herb marinade or Italian dressing
Toasted sesame seeds
Toasted slivered almonds
Dressing:
6 T. sugar
1 t. salt
1/4 t. pepper
1/4 C. olive or canola oil
4 t. white vinegar
2 T. lemon juice
Put dressing on right before serving. It doesn't keep well, but we've never had any left over to worry about that!

Summer meals around here are on the grill, salads and lots of fresh veggies. We love marinated chicken, taco salad, your recipe for Oriental Chicken Salad and desserts lean toward the pudding variety.

I'd like Cheri, too! I like me a simple Italian grilled chicken with grilled or whipped potatoes. Pour lite Italian dressing over the chicken and grill. I like grilled potatoes in little pieces with garlic powder, garlic salt, and butter. Whipped potatoes are mashed potatoes with sour cream and cream cheese, topped with a slice or two of cheese and baked. Yummy with the chicken!
