Barbecue Ribs
(printable)
Serves 4
3 lbs beef or pork ribs of choice
1 cup ketchup
1/2 an onion, finely chopped
4 garlic cloves, minced
1/4 cup vinegar
1/8 cup brown sugar
1 teaspoon chili powder
1 teaspoon worcestershire sauce
1/4 teaspoon garlic powder
2 dashes hot pepper sauce, if desired.
Lightly grease a roasting pan. Lay ribs in roasting pan and bake at 350° for an hour. Meanwhile combine remining ingredients in a small saucepan. Simmer uncovered for about 10 minutes. Drain ribs and return to pan. Cover with sauce and bake uncovered for another hour.

This recipe is really flexible. Have some barbecue sauce that's a favorite? Use it instead of making your own. Or add any of your favorite flavors to this sauce, like a chopped up red pepper.
We like our ribs with baked beans and a potato salad, and how about some corn muffins? We haven't made muffins with this yet but yum-o!
