Meatless Monday - Sesame Noodles

We've designated February as Meatless Monday Month. It's always nice to have meatless meals in your menu to help keep under budget. Here's the first Meatless Monday recipe. More to come!

Sesame Noodles

Serves 8
Recipe adapted from Eating Well
1 lb whole wheat spaghetti
1/2 cup reduced-sodium soy sauce
2 tablespoons sesame seed oil
2 tablespoons canola oil
2 tablespoons lime juice
1 1/2 teaspoons crushed red pepper
4 green onions, sliced and divided
1/4 cup fresh cilantro, divided (optional)
4 cups snow peas, trimmed and cut diagonally
1 red or green bell pepper, thinly sliced
1/4 cup toasted sesame seeds
Cook spaghetti according to package directions. Meanwhile, whisk soy sauce, sesame seed oil, canola oil, lime juice, crushed red pepper and about half the cilantro, if using. Saute half the green onion, snow peas and bell pepper just until slightly tender. Add noodles and sauce, toss to coat. To serve, mix in sesame seeds and garnish with remaining cilantro and green onions.
*Note: This can be served hot or cold.


Even if you don't serve this meal on "Plays with his food Fred" it's likely to be a hit with the little mouths.
